Cantine Due Palme is a cooperative founded in 1989, located in the town of Cellino San Marco (BR), between the provinces Brindisi, Lecce and Taranto, in the center of the production of Salento (Apulia, southern Italy). Today it counts over 850 members growers, producers of Negroamaro, Malvasia Nera and Primitivo (grape varieties) as well as Sangiovese, Montepulciano, Cabernet Sauvignon and Merlot, Pinot Noir and white, Chardonnay and Sauvignon. The production rate is 90% of red grapes and 10% of white grapes, with an annual average of about 130,000 tons of grapes and a yield of 70-80 quintals per hectare. The cellars have a capacity of 150,000 hectoliters, of which 36,500 are temperature controlled steel rotary fermenters horizontal and vertical for the vinification of the grapes. Rooms are equipped with 5 drain grapes, 3 soft vacuum presses, crushers 3, 2 refrigeration chillers from 1.1 million per hour, 21 horizontal rotary fermenters, 26 winemakers and a vertical laboratory technology. Also in Cellino San Marco Cantine Due Palme has a new winery that is spread over an area of \u200b\u200b10,000 square meters of which about 2,000 square meters where they are located sales offices, the tasting room, the point of sale, the barrel (French oak barrels , oak barrels and French oak casks) and a warehouse of 1,000 square meters which is the bottling and storage of bottled wine. Cantine Due Palme has recently incorporated a historic winery built in 1955, land reform, confirming one of the major poles of the entire cooperative Puglia and Southern Italy.
